Recipe for Mango Tango Pickle- Companion for a Winter Afternoon in leisure

While we all cherish the memories of our travels to places  and the food we eat there, sometimes we also like to stay home and relax in the winter afternoon sun and bask in the sunshine. A plate of tangy mango pickle is a surely good way to spice up the time spent in leisure. When the mango season arrives, our mango tree provides plentiful of raw mangos. Unable to control the incessant supply, we regularly try to preserve the flavor by making pickles. One of our favorite is Mango tango pickle made by our Maa.  I tried to jot down the way the pickle is prepared in a simple way.. Hope you like it.. 

Ingredients:

Take mangoes unripe..  10 pieces approx... Peeled 1 kg

Grating  Kaddukas with Big grater

Sugar 750 gm as per taste   ( tangy or sweet)

Salt  as per taste 1 tbsp

Haldi  1tsp

Dry Chilli powder 1tbsp

Vinegar   1 tbsp

Mustard oil     300ml

For pickle Masala mixture:

jeera sabud roasted and grinded  1.5 tsp

sauf  roasted  50gm

dhania roasted 50gm

Ajwain + Methi + Kalonji  Mix roasted   total 1 tsp

Put all mixture in a mixie and grinding to powder

Coarse grind Kaju + Kismis+ Pista = 50+50+50   ( optional)

Process:

1 cup water + sugar + vinegar

5 min boil till melting

put grated mango + haldi + chilli+ salt

boil 25 min approx till semi drying of mixture

Put masala mixture on above kadhai

Put kaju , kismis, pista (optional)

Boil in kadhai  for 5 to 10 mins  in  Simmer flame

Boil Oil 300 gm separately  ( Chouk) and put in Kadhai

Simmer for 5mins

let it cool and transfer to container.
